You can check it (if you do not have "rm_work" in your local.conf) by looking to your build_directory/tmp/work/XX/util-linux/XX/image. Here, it is the image of the package compiled and in the usr/include directory, you will find your uuid/uuid.h. So I think you need only this package (and maybe not the e2fsprogs).
